Squash Stir Fry
Squash Stir Fry
1 tsp of sesame seed oil
1/4 pound of ground beef
1 clove of garlic, minced
1/4 onion, sliced thinly
1 yellow squash, cleaned and cut into 1/4 -1/2 inch pieces
2 tsp of soy sauce
2 tsp of oyster sauce
2 tsp of ketchup
1-2 tap of fresh herbs, minced (basil, mint, cilantro)
In a sauté pan over medium high heat, add sesame seed oil. Add the squash and cook for 2-3 minutes, occasionally stirring and making sure that the squash begins to caramelize. Add the onions and garlic and stir together until onions become translucent add ground beef and cook, breaking up the ground beef into crumbles. Stir together. Add the soy sauce, oyster sauce and ketchup and stir together and cook for for 2-3 more minutes. Top off with fresh herbs And serve over rice or in a burger bun for a healthy “sloppy joe” sandwich
1/4 lb of ground beef 1-2 Tbs mozzarella cheese 1-2 Tbs tomato sauce, ketchup or spaghetti sauce 3-5 slices of pepperoni 1-2 tsp of mayonnaise 1 burger bun Salt and pepper to taste
Preheat oven to 400 degrees.
Spread mayonnaise on inside of burger and place on an oven safe frying or grill pan over medium high heat for 1 -2 minutes, or until the bread is toasted and crisped.
Mold the ground beef into a patty, season both sides with salt and pepper. Cook on the same pan, over medium heat for 2-3 minutes. Flip the burger over and spread some tomato sauce on the meat, topped off with the cheese and pepperoni. Place entire pan in the oven for 3-5 minutes.
Carefully remove pan from the oven and allow meat to rest for 1-2 minutes. Use a spatula to remove the burger and tap the bottom of the burger with a paper towel before placing it in a bun with your favorite toppings.
